Marinated Tomatoes

This is one of those recipes that got lost from a long time ago and was imbedded in another recipe. This needed to be it’s own feature.
This one is an oldie but goodie. We had marinated tomatoes this week. Growing up my Nonnie {that means grandma in our family} would pick cucumber, tomato, and bell pepper from our garden. She would diced all of that and also add some onion, olive oil, sugar and apple cider vinegar with loads of salt and pepper. We called it Goulash. It’s one of those comfort foods that I just make. I truly do not have real measurements for this. It turns out a little different each time and I am ok with that.
Slice your tomato(s). Add them to a container (with a lid) with salt and pepper. I use  fresh basil and Thyme from my herb garden (use what you have), about 1/4 cup of olive oil, about 1 tbsp of lemon juice,  2 tbsp of apple cider vinegar, about three green onions (just the green), a tsp of sugar and a tbsp of minced garlic.
When you first taste it, you will taste the shock of the vinegar, lemon, then the sugar. Let it marinate for 24 hours before eating it.  Try this out over the weekend and do it up Southern style with a tall glass of iced sweet tea.
